The Scoop on Katie’s Ice Cream

Katie Kimball is taking over the family business—the big, pink ice cream shop on Main Street in Hyannis that bears her first name. “My mom and dad always had the dream of owning an ice cream store,” says Kimball. Her parents purchased the shop in 2002, when it was called Maggie’s, and renamed it after her. Though Kimball scooped ice cream in the summers while growing up, it wasn’t a given that she’d take over Katie’s Ice Cream one day. “I went to school to study biology,” she says. “But through that, I learned that food is science. That eventually brought me back to ice cream.” Last year, Katie’s mother, Julie Kimball, decided to retire and Katie jumped into the business. About 25 classic flavors, such as vanilla, chocolate and pistachio, are on hand at all times. Kimball also scoops out four or five specialty flavors daily. Customers buy the Lavender Honeycomb in buckets and they can’t get enough of Cape Cod Sand (a secret recipe). “I look at food trends,” says Kimball. “It’s about capturing the essence of what people are looking for.”
